Dosai is a traditional South Indian cuisine. It is made with rice flour and lentil flour. Both the flours are mixed and fermented overnight before the preparation. The main ingredient of dosai is dosai rice and black gram. Generally, dosai is served with sambhar, but it is also consumed with chutney, potato curry, non-vegetarian curries, idli powder or other stuffings. The origin of dosai has been known to be from Tamil Nadu but there is a slight difference between the dosai from Tamil Nadu and from Karnataka. It is said that the thinner form of dosai originated from Karnataka's Udupi. While Tamil Nadu makes a thicker and smaller dosai. Traditionally dosai was being prepared with great hard work and it consumed a lot of time. Dosai preparation included selecting the right rice and black gram, then measuring them in the right ratio. After they are measured they were ground in manually operated machines or equipment. The ground paste is then allowed to be stored overnight so that the paste gets fermented and puffs up. After a night they can be prepared in the morning and served with any curry of choice. They are very soft and crunchy when everything is done in right way. All you need to do is mix the powder with water and leave for 5 minutes and make round and thin dosai. When they get light golden brown colour turn the sides and cook well.
