Saffron is derived from a flower called 'crocus sativus' (Saffron crocus) It is a small plant with 20 to 30 cm height. It bears a maximum of four flowers. Each flower has three vivid crimson stigmas. They are present at the distal end of the flower's carpel. The style and stigma are collected from the flower and are sun dried. These sun dried threads are the costliest spice among other spices of the world. They are mainly used for seasoning and colouring foods. It was first cultivated near Greece. It has a chemical component 'crocin' which imparts a golden yellow colour to the dishes. Now Iran is the top producer of saffron with 90% of world production from Iran. There are much different varieties of saffron that is used for being sold in place of the original saffron. They all look similar in appearance but their quality differs very much. It is traditionally believed that if a pregnant woman intakes a pinch of saffron with warm milk regularly the baby will be fairer and will have good health. So it is popular in India for this purpose too. Other than this is is add in almost all the desserts for its flavour.
